Creamy sweet potato (kumara) pasta

Serves 4

Ingredients

250g pasta, cooked

400g sweet potato (kumara), peeled and chopped

2 tbs oil

1 onion, chopped

1 clove garlic, finely chopped

1 tsp vegetarian green curry paste

250ml evaporated milk

salt and pepper to taste

Method

  1. Brush sweet potato (kumara) with oil and roast, in a hot oven, 220°C for 35 minutes or until soft.

  2. Saute onion, garlic and curry paste in 1 tsp oil. Add the sweet potato (kumara) and remaining ingredients. Simmer until liquid is slightly reduced and season to taste.

  3. Serve over cooked pasta.
