Carisma Crispy Potato Salad with Red Cabbage & Blue Cheese Dressing

Serves 4

Ingredients

1kg Carisma potatoes, cut into bite-sized pieces

2 tbsp olive oil

1 cup shredded red cabbage

2 celery sticks, sliced

1/2 cup celery leaves

1/2 cup baby spinach

FOR DRESSING

1/2 cup reduced-fat Greek yoghurt

1 garlic clove, finely chopped

1 tsp honey to serve

40g blue cheese

1/3 cup toasted walnuts, roughly chopped

Method

  1. Preheat oven to 190C. Place the cut potatoes into a baking tray, drizzle with olive oil and seasoning according to your personal preference. Roast for 30 minutes or until golden and tender.

  2. Mix the dressing ingredients in a small bowl, except the blue cheese and walnuts, and season to taste

  3. Assemble the salad on a large serving plate. Layer the potatoes, cabbage, celery and spinach.

  4. Drizzle liberally with the dressing and finish with the crumbled blue cheese and walnuts.
