Vegetable cakes

Ingredients

2 large eggs

1 parsnip, quartered

1 clove garlic, peeled

1 tsp salt, optional

¼ tsp whole black peppercorns

½ cup almond flour

2 tbsp oregano, fresh

1 tbsp extra virgin olive oil, optional

½ small onion, peeled

3 cups spinach, fresh

1 cup sun-dried tomatoes, drained

Method

  1. Heat the vegetable and Place egg, parsnip, garlic, salt, pepper, flour and oregano into the Vitamix container and secure the lid.

  2. Select Variable 1.

  3. Turn machine on slowly increase speed to the highest speed.

  4. Blend for 30 seconds, using the tamper to push the ingredients into the blade.

  5. In a large sauté pan heat the olive oil on medium high heat.

  6. Add onions and sauté until tender about 5 minutes. Add the spinach and sundried tomatoes cook until wilted.

  7. Add mixture to the mixture in the Vitamix container.

  8. Select Variable 5.

  9. Switch machine on and off quickly to pulse. Pulse 6 to 8 times to incorporate.

  10. Prepare a tray with baking paper.

  11. Scoop mixture out onto baking paper with a #40 scoop.

  12. Bake at 180°C for 20 to 30 minutes or until firm.

  13. Serve immediately with your favorite dipping sauce.
