Carisma Pasta Alla Genovese

Serves 6

Ingredients

400g Carisma potatoes, diced into 2cm cubes

400g linguine

200g green beans, trimmed

PESTO

2 garlic cloves

30g pinenuts

2 cups tightly packed basil leaves

45g grated parmesan (or 3-4 tbsp of nutritional yeast)

3/4 cup olive oil

Grated parmesan & basil leaves to garnish

Method

  1. Firstly make the pesto. Place the garlic in a food processor and blend to a paste.

  2. Season to your personal preference, add the pine nuts and blend to form a coarse paste.

  3. Add the basil leaves and pulse to combine, then add the parmesan.

  4. Drizzle in the olive oil and blend until just combined.

  5. Meanwhile, bring a large pot of water to the boil. Add the potatoes. Add the linguine after 5 minutes. Add the beans with 2 minutes of pasta cooking time remaining.

  6. Drain the pot, retaining 1 cup of the cooking water.

  7. Return the potato mix to the pot. Stir through the pesto, adding a little pasta water to loosen the sauce if required.

  8. Serve pasta garnished with basil and grated parmesan.
